This class provides a deeper understanding of the coffee itself and builds on the practical skills learned at Foundation Level.  Milk techniques, inculding latte art, are introduced as well as health and safety, customer service and basic business.  This course is suitable for people already working as baristas.

Grace McCutchan

Red Rooster Coffee Roaster Education at Undercurrent Coffee Lab in Charlotte, NC --------- Grace McCutchan is the Head Trainer and Accounts Manager for Red Rooster Coffee in Floyd, VA. She began her coffee career at the age of 14, including many years spent as a barista and as an assistant roaster. She is an Authorized SCA trainer in both Brewing and Barista and most recently took her skills to the 2019 US Coffee Champs Nashville Qualifiers where she won first place. In 2018 she was mentioned as one of the top female roasters in the country by Coffee Review in their article, Women in Coffee: Why it Matters That "She's the Roaster" and in 2016 she won first place in the America's Best Espresso competition at Coffee Fest NYC.
