THE MENU AND WINES

Freshly Shucked Tasmanian Oysters
Frèrejean Frères Blanc de Blancs 1er Cru - $149
"Rich and reverberant. Lots of depth. Far from a typical Blanc de Blancs, but then Blanc de Blancs are changing thanks to climate change. Hint of oxidation which is what they want, apparently, but will not appeal to those who see any trace of oxidation as a fault. Big and bold, very long. Obvious autolysis." - 17 Points, Jancis Robinson

Hokkaido Scallops, Avruga, Beurre Blanc
+
Foie Gras, Corn Bread, Dates, Hazelnut

2007 Frèrejean Frères Cuvée des Hussard VV 1er Cru - $199
"The wine has precision and elegance with great palate length.  The palate reflects ripe pomelo, yellow nectarines, ripe lemons, rich grapefruit, oily tangerine skins with hints of salinity and mineral characters.
Also, some lemon-curd spread over golden toast which gives the wine such intensity which marries well with the honeyed cashews which are grated on top, and then some preserved lemon rind on the edges.  It finishes with an impact of lemon meringue pie and soft spices. An impressive champagne!" - Bernadette O'Shea

Sous-Vide Organic Chicken, Australian Truffle, Egg Yolk
2012 Léoville-Poyferré, Saint-Julien 2e Cru Classé - $289
"A dark, fleshy wine, the Léoville Poyferré 2012 is round, succulent and deeply expressive. Dark red cherry, plum, mocha, graphite and lavender are fused together in an effortless, silky Saint-Julien built on texture. Striking and totally beautiful, the 2012 will be ready to deliver its charms early. All the elements are in the right place. This is a gorgeous showing from Léoville-Poyferré." - 94+ Points, Antonio Galloni, Vinous

2012 Léoville-Barton, Saint-Julien 2e Cru Classé - $299
"Dense ruby/purple, with cassis licorice and forest floors notes in the aromatics, Léoville-Barton’s 2012 is a relatively big, rich, masculine style of wine. This full-bodied wine needs 5-8 years of cellaring and should evolve easily for 25-30 years." - 92 Points, RPJ, The Wine Advocate

-------------------------------------------

Wagyu MB8+, Petits Légumes, Paris Mash
2006 Angélus, Saint-Émilion Grand Cru Classé - $1499
"The 2006 Château Angelus, a blend of 47% Cabernet Franc, 50% Merlot and 3% Cabernet Sauvignon, has a very perfumed bouquet with scents of blueberry, cassis, crushed violets and just a touch of mushroom. This is very generous. The palate is medium-bodied with a smooth, slightly toasty entry. The acidity is quite low compared to other 2006 Saint Emilions, but there is harmony here and the tannins seem very fine. There is real density on the finish, although I was just seeking a little more delineation to come through. Give this another two or three years in bottle. Tasted January 2016." - 94 Points, Neal Martin, The Wine Advocate

2006 Margaux, Margaux 1er Cru Classé - $1550
"The 2006 Château Margaux has a sense of airiness and wonderful definition on the nose: wild strawberry, redcurrant, cedar and crushed roses soaring from the glass, but it never strives for the opulence of say the 2006 Château Palmer. The palate is very well balanced with fine and quite firm tannin in the mouth. This seems to be approaching its plateau after a decade. While not a powerful or ostentatious Château Margaux, it epitomizes understatement and refinement in a similar vein to Lafite-Rothschild. It is only after the wine has been swallowed that you appreciate its qualities and you feel urged to go back for another sip. Tasted January 2016." - 94 Points, Neal Martin, The Wine Advocate

2006 Ausone, Saint-Émilion Grand Cru Classé 'A' - $2250
"Bright medium ruby. Brooding, pure aromas of blackberry, blueberry, boysenberry, espresso and minerals. Wonderfully dense yet weightless, with a penetrating calcaire energy to its sappy black fruit and mineral flavors. This has filled out impressively since its early days in barrel but is still just at the beginning of its evolution. The slowly mounting, compellingly long finish saturates the palate with flavor, and the substantial tannins are amazingly sweet and fine-grained. My early candidate for wine of the vintage: this fills the mouth with perfume but its fruit of steel suggests that it will last a very long time. I won't be around to drink this beauty at its peak." - 97 Points, Stephen Tanzer, Vinous

2006 Lafite Rothschild, Pauillac 1er Cru Classé - $3075
"The 2006 Château Lafite-Rothschild offers impressive fruit intensity on the nose, although it does not have the precision of the 2006 Mouton-Rothschild. Red berry fruits intermingle with rose petals and sous-bois scents - very typical Lafite bouquet where less can be more. The palate is medium-bodied with fine tannin and a keen line of acidity. It is certainly very well balanced with graphite-tinged black fruit, but whereas Mouton-Rothschild possesses that peacock's tail, Lafite remains linear. Nevertheless, the sophistication really comes through here. It is a Lafite-Rothschild that may spring a few surprises down the line, one of those wines that keeps drawing you back. Understated class. Tasted April 2016."- 95 Points, Neal Martin, The Wine Advocate

Roquefort Gabriel Coulet, Etorki, Tête de Moine
+
Earl Grey Poached Pears, Macadamia Ice Cream

1989 Yquem, Sauternes 1er Cru Classé - $730 (375mL)
"Medium to deep gold colored, the 1989 d'Yquem is little closed to begin, slowly unfurling to give gorgeous dried mango, pineapple paste and candied peel scents with hints of praline, nutmeg, lemon butter and crème caramel plus a waft of crushed stones. The palate delivers powerful, wonderfully concentrated notes of dried stone fruits with provocative nutty nuances and a seamless acid backbone, packaged within a satiny texture and finishing on a lingering lemon tea and minerals note." - 97 Points, Lisa Perrotti-Brown, The Wine Advocate

-------------------------------------------

Coffee and Pousse Café
1970 Castarède Bas Armagnac - $380
Lively crystallised Lemon orange peel nose plus nougat, vanilla and oak char. Smells a bit rustic but has good depth. Good weight on the palate, quite silky to attack, with firm, fiery spirit, and chewiness from the wood tannin.
